Italian Dressing Ideas
I love to use Italian Dressing as a marinade for chicken. I throw some chicken in a plastic bag, add dressing to coat and stick it in the fridge until I'm ready to cook. The chicken has so much flavor this way, and the cold leftovers are great on salad. My favorite way to cook the chicken is on the grill.
Another easy idea is to use the crockpot. Just dump the chicken and dressing into the crockpot and cook on low for several hours. 1 hour (or less) before you are ready to eat add a block of cream cheese. It melts into the dressing and makes a creamy sauce to pour over your chicken and rice/potatoes/pasta.
Foil Wrap
I'm not sure why wrapping up food in foil and cooking it seems to add so much flavor to the food, but it does. You can cook your foil packets in the oven or on the BBQ. Either way it's delicious.
One of my favorites is to take chicken, and some veggies like sliced red potatoes, fresh green beans, cherry/grape tomatoes and a drizzle of balsamic vinegar and wrap it up. Sooooooooooo yummy! Other things you can add are squash, zucchini, parsnips, carrots, etc. Use your imagination.
My new favorite wrap is sliced potatoes, sliced onion, chopped garlic, olive oil, butter, salt and pepper. The butter and garlic spread through the entire packet and the onions turn super sweet.
Speaking of garlic, a great way to get the mild, sweet garlic flavor is to take you head of garlic, cut off the top so that you expose the cloves, drizzle some olive oil on top and wrap it up in foil. Again you can cook this packet on the grill or in the oven until the garlic is soft and mushy. If you let it cool enough so that you can handle it you can squeeze the garlic and the cloves pop right out. I then mash them into mashed potatoes, or spread them on some french bread or add them to a sauce.... you get the idea. ;)
